How to Make Lumpiang Sariwa
Lumpiang Sariwa, also known as Fresh Spring Rolls recipe is a popular Filipino dish of fresh vegetables wrapped in a thin crepe-like wrapper and served with a savory peanut sauce. It’s a perfect appetizer or main dish for a light and healthy meal.
Ingredients in the making of Lumpiang Sariwa
FOR THE FILLINGS
– 1 1/2 cups of julienned carrots
– 2 cups of sweet potatoes cubed
– tbsp fish sauce
– 2 cups string beans baguio beans, chopped
– 1 pack extra firm tofu sliced into strips
– 1 tablespoon soy sauce
– 2 tbsp brown sugar
– 1/2 cup of sliced onions
– 2 cloves garlic – minced
– 2tbsp of vegetable oil
– 1/2 cup of water
– 2 cups cabbage – shredded
– 13 pieces prawns – shelled and deveined
– ½ cups ground pork
– Salt and pepper to taste
FOR THE SAUCE
– 6 tbsp brown sugar
– 1 tablespoon soy sauce
– 2 tablespoons cornstarch – dissolved in ¼ cup water
– ⅛ teaspoon salt
– 4 big cloves garlic – minced
– 6 tbsp brown sugar
– 2 cups water
FOR THE TOPPINGS AND GARNISH
– Chopped peanuts
– lettuce leaves
INSTRUCTIONS:
1. Heat the vegetable oil in a pan and sauté the garlic and onions until fragrant. Add the ground pork and cook for 4 minutes. Constantly stir to remove lumps.
2. Add carrots, sweet potatoes, green beans, and cabbage. Mix well and cook for about 5 minutes.
3. Pour in the soy sauce, brown sugar, water, fish sauce, and pepper. Mix well and cook for another 5 minutes or until the vegetables are cooked but still crunchy.
4. Remove the cover and let the water evaporate. Add tofu and shrimp. Stir fry for 1 minute.
5. Remove the pan from the heat and let it cool down.
LUMPIANG SARIWA SAUCE
1. Combine all the ingredients in a saucepan except for the cornstarch mixture.
2. Heat the saucepan over medium-low heat and bring it to a soft boil. Allow it to cook for 3 minutes.
3. Once done, add the cornstarch mixture and continue cooking while whisking constantly until the sauce thickens.
ASSEMBLE
1. Take one lumpia wrapper, and place a lettuce leaf on top. Put 2 tablespoons of the vegetable mixture on one side.
2. Roll the wrapper tightly and fold the sides inward to seal the filling.
3. Repeat until all the wrappers are filled and rolled.
4. Serve with peanut sauce on top and sprinkle some crushed peanuts
