How to cook Pork Nilaga or Nilagang Baboy (Boiled Pork Soup)

Here’s a recipe for Nilagang Baboy or Pork Nilaga

Ingredients:

– 1 kg pork belly or pork ribs

– 1 onion, quartered

– 2 medium potatoes – peeled and cut into cubes

– 1 thumb-sized ginger, sliced- 2 potatoes, peeled and quartered

– 1/4 small cabbage, quartered

– 1 teaspoon whole peppercorns

– 1 tablespoon fish sauce

– 4 pieces ripe banana (saba) sliced in half crosswise

– 1 bunch of bok choy

– Salt to taste

– 8 cups water

Instructions on How to Cook Pork Nilaga

1. Add water, pork belly or ribs, onion, garlic, ginger, and peppercorns in a large pot. Bring to a boil over medium-high heat. 2. Skim off any scum that rises to the surface. Lower the heat to medium-low and let it simmer for 1 to 1 1/2 hours or until the pork is tender.

3. Add potatoes and bananas. Cook for 10 minutes or until almost tender.

4. Add the cabbage and bok choy and cook for another 5 minutes or until vegetables are tender.

5. Season with fish sauce and salt to taste.

6. Serve hot with steamed rice.
