How to cook tinolang manok

Ingredients: 

– 2 lbs chicken, cut into serving pieces

– 1 cup malunggay leaves

– 2  thumb-sized ginger sliced

– 1 cup green papaya or chayote, cubed

– 1 medium-sized onion, chopped

– 3 cloves garlic, minced

– 2 tablespoons cooking oil

– 1 chicken cube 

– 1 cup chili (hot pepper) leaves or spinach

– 2 tablespoons fish sauce

– Salt and pepper to taste

Instructions on How to Cook Tinolang Manok

1. Boil chicken on medium heat for 10 minutes and add a pinch of salt; skim scum that floats on top. 

2. In a pot over medium heat, sauté garlic, onion, and ginger in oil until fragrant.

3. Add chicken pieces and cook until slightly browned.

4. Pour the water used in boiling, add more if needed to cover the chicken, and bring it to a boil.

5. Add the chicken cube, green papaya, or chayote and simmer for 5-10 minutes or until tender.

6. Put malunggay and chili leaves in the pot.  Season with fish sauce

7. Simmer for another 2 minutes.

8. Adjust seasoning with salt and pepper to taste.

9. Serve hot with rice.
