How to cook Pork Sisig

Ingredients:

– 1 1/2 lb. pork belly, chopped into small pieces

– 1 piece onion, chopped

– ¼ salt 

– 6 cups of water

– 1/4 cup green onion, chopped

– 3 tbsp. soy sauce

– ¼ teaspoon ground black pepper 

– 2 tbsp. vinegar

– 2 tbsp. calamansi juice (or 1 pc lemon)

– 3 tbsp. mayonnaise

– 2 tbsp. Butter

– 1 pc. egg

– ¼ lb chicken liver 

– ½ teaspoon garlic powder 

– 2 pcs. red chilli peppers, chopped (optional)

– Salt and pepper to taste

– 1 pc. of small egg (optional)

Instructions:

  1. Pour the water into a pan. Bring to a boil, then add salt and pepper. 
  2. Over medium heat, simmer the pork belly for 40 minutes to 50 minutes or until crispy and golden brown. Remove the boiled ingredients and set aside. Drain the excess water. 
  3. In the same pan, melt the butter and saute the garlic until fragrant.
  4. Add the onions and cook until translucent.
  5.  Add the chicken liver. Crush the chicken liver while cooking. Add the cooked pork belly and stir-fry for 11 to 13 minutes. 
  6.  Add the soy sauce, vinegar, and calamansi juice. Mix well.
  7. Add the chopped chilli peppers (if using) and season with salt and pepper to taste.
  8. Add the mayonnaise and mix well. Cook for another minute.
  9. Garnish with chopped green onions and top with raw egg. Serve hot with rice.
